Having won Michelin stars on several occasions, both in the UK and Ireland, fans of this chef were waiting with bated breath for his next permanent move – once it was announced on Netflix ‘Knife Edge” that he was returning to the UK. In February 2026, along with his wife, Laura, Tony opened Daise. A small, intimate restaurant showcasing the excellence of Tony’s repertoire, with super personal service from Laura. The couple took their time to find the perfect venue, so expect some great recollections of their journey of discovery.
