Oliver began his career training at the Lycée Hôtelier de Marseille and his elite pedigree includes years at some of France's most celebrated multi-Michelin-starred institutions, including Le Petit Nice Passedat (3 stars) in Marseille and a five-year tenure at Restaurant Guy Savoy (3 stars) in Paris, where he rose to the rank of Sous Chef. Most recently, he served as Chef de Cuisine at the Michelin-starred Frenchie rue du Nil.
