Award-winning pastry chef Michael Kwan started his career in the kitchens of Hong Kong and and since gone on to become the Executive Pastry Chef at The Dorchester. Along the way, he’s worked at Hotel Cafe Royal, Lauder, Hakkasan and The Fat Duck. He has now set up the Asian bakery and café in Soho, ONSU BAKERY, blending precision with creativity and perfectly balancing art and science.
