With a career in the kitchens of Peter Sanchez, Simon Rogan and Gareth Ward – Matt Samson opened his solo venture, Restaurant Fir, in 2025. An incredibly personal restaurant with just four tables, Matt cooks solo in the kitchen and serves every guest himself. Still just 25 years old, Matt is a shining example of how a young chef can take the leap to business owner. Expect some recollections of his past career, some insight into his own restaurant, and some incredible cooking. Within just a couple of months, Restaurant Fir was listed in the Michelin Guide, and we predict this young chef is going to go one heck of a long way.
