Marshfield Farm unveils chef-focused Acres range at HRC 2026

Marshfield Farm Ice Cream launched Acres, a chef-focused ice cream range engineered specifically for performance in professional kitchens, and presented it to the market at HRC at Excel London. Produced on the family’s 1,200-acre regenerative dairy farm in Wiltshire, the range was created to meet the practical demands of busy service while delivering high-quality flavour and consistency.

The launch marked a new phase of innovation for the business, driven by the next generation of the Marshfield Farm family and supported by more than 30 years and three generations of ice cream-making expertise.

Showcased within the HRC environment, Acres was positioned not as a standalone dessert but as an ingredient designed to integrate seamlessly with plated dishes. A low-overrun recipe reduced air content to create a denser texture and richer mouthfeel, while carefully balanced cream levels ensured the ice cream remained indulgent yet complementary to other dessert elements. The range contained no inclusions, giving chefs full creative control when building dishes.

The initial line-up featured four flavours — Madagascan Vanilla, Chocolate Sea Salt, Caramel Sea Salt and Strawberry — supplied in 4.5-litre tubs with an RRP of £24.38.

As one of the few producers controlling its supply chain ‘from field to freezer’, every batch of Acres began with fresh milk from Marshfield Farm’s own herd of 250 cows, with around 95% of feed grown on the farm. This closed-loop approach ensured consistent milk quality while supporting regenerative farming principles. Flavours were developed using premium ingredients including Madagascan vanilla, 52% cocoa mass dark chocolate, hand-harvested Cornish sea salt and fresh strawberries, selected for clarity of flavour and reliability in high-pressure kitchen environments.

Ice cream is often the one element that doesn’t behave quite as chefs need it to. Acres was created to solve that problem — combining provenance with performance to deliver consistent flavour, texture and stability during service.”

The launch followed a £5 million investment in Marshfield Farm’s dairy and production facilities, increasing output while maintaining farm-made quality standards. The investment also included a new development kitchen and dedicated hospitality space, allowing chefs, buyers and customers to visit the farm for demonstrations, tastings and tours.
