The estate grows a carefully selected range of Italian cultivars-Frantoio, Leccino, Coratina, and FS17, chosen for their complementary flavour profiles. These varietals are hand-harvested at optimal ripeness and expertly blended to produce oils that are balanced, complex, and expressive, with notes ranging from fresh green grass and artichoke to peppery finishes and almond undertones.

At the heart of RIO LARGO’s production is a state-of-the-art extraction facility, where olives are cold-pressed within hours of harvest to preserve flavour, aroma, and nutritional integrity.
