Serious ice cream for people who are serious about food. Made from fresh milk on our regenerative farm. Crafted by people who’ve been obsessing over ice cream for more than three decades.
We called it Acres because everything starts with the land, all 1,200 acres of it. The crops we grow? They feed our cows. The way we farm protects and regenerates the soil. And the milk? Exceptionally good, because we control every step that leads to it.
Acres has been expertly developed for chefs. Overrun is deliberately kept low, reducing air and increasing density. The result is a heavier, more indulgent mouthfeel with the structural stability required for professional kitchen service; holding well from freezer to pass and back again. Cream levels have been carefully considered to keep the profile light enough to complement plated desserts rather than dominate them. Flavours are built to be clear and concentrated, using ingredients selected for both quality and stability in the kitchen. All our ice creams are smooth. We don’t use inclusions. No distractions. Just very, very good ice cream which pairs perfectly with great desserts.
We partner with producers and suppliers who share our standards, ensuring every component earns its place in the recipe. We source our salt from The Cornish Sea Salt Company, hand-harvested just eight metres from the Atlantic shoreline in Cornwall. Our chocolate ice cream uses 52% cocoa mass dark chocolate callets melted directly into the mix.
How did we come to be? Flo grew up in the ice cream business her father started in 1988, so great ice cream has always been part of her world. When she joined the Marshfield Farm Ice Cream in 2020, followed shortly by her husband Joe, who brought experience from brewing and food service, they saw a chance to create something new and fresh. Both are serious about food. Together, they set out to build a range made specifically for chefs: thoughtfully crafted, ingredient-led, and designed to complement desserts rather than compete with them.
