Acetaia
Castelli is a family-run farm, established in 1895 and managed by the 4th
generation of the family. We grow our own grapes in our 30-hectare-estate in
the heart of the Balsamic Vinegar homeland and produce premium balsamic
vinegars and condiments using our Lambrusco and Trebbiano grapes. We cook our
musts traditionally in open cauldrons and mature them in tiny barrels of
precious wood as to create a rich, luxurious and complex balsamic using century
old family recipes.
