State-of-the-art Culinary School adds yet another MULTIVAC packaging machine to their collection
In October, after two
years of hard work, Chef Patron Alain Roux unveiled his brand new
state-of-the-art Culinary School and Michel Roux library based at The Waterside
Inn in Bray on Thames. The cookery school is a conversion of Alain’s late
father, Michel Roux OBE’s home, and boasts an intimate centre for culinary
education and training.
With a variety of
bespoke cooking classes, unique courses and demonstrations on offer, the school
is already known for hosting one of the best training kitchens dedicated to
French cuisine in the UK, as well as elevating the Roux culinary legacy and
offering exciting opportunities for those in the hospitality industry.
The school first
opened its doors at the end of August 2023 with a soft launch cookery course,
before opening its doors to customers properly at the end of October. Alain
Roux is one of the world’s most respected chefs and follows in his fathers
footsteps as a master pâtissier, “You’re not just learning recipes; you’re
learning to take your cooking to the next level.”.
Consistent

The Roux family have
been familiar with Multivac for over 30 years, with Alain remembering
nothing other than MULTIVAC in each of his families kitchens.

Two years ago, when
planning for the culinary school first started, there was already the need for a
new vacuum chamber machine and Alain knew that it would be a MULTIVAC that
took the space. With the help of Daniel Ullah, Chambers Product Manager
at MULTIVAC UK, the decision was made to add a brand new C200 to
their ever growing collection.
The C range of vacuum
chamber machines is more professional, and the C200 model has a particularly
spacious chamber, with dimensions of 465 x 380 x 150mm, making it not only
suitable for packaging larger products, but also allowing it to provide a
higher output than its smaller counterparts, giving Alain and his students
maximum flexibility and efficiency.
For Alain and his
team, everything is done in house and they do what they can to keep everything
as fresh as possible, from butchery, fish and meat, to vegetables and
infusions, the use of a vacuum packaging machine really compliments their
technique.
The evacuation and gas
flushing process of the vacuum chamber machine are pressure-controlled, which
helps to achieve the highest possible pack quality, consistently, every time.
As the Culinary School is part of The Waterside Inn, a 3 Michelin star restaurant,
maintaining this high standard is crucial.
The tabletop machines
are easy to operate, clean and maintain. All MULTIVAC Machines in the
C series have a chamber lid with a viewing window that allows the user to view
the packaging procedure.
