Tom grew up in Newport, South Wales surrounded by nature. His love of cooking started when making Welsh cakes with his mum. This simple love grew into an obsession that led him to his apprenticeship at the Ritz London. He continued his career through the kitchens of Thomas Keller at Per Se in New York and Simon Rogans, L'Enclume.
In 2018 Tom became the UK candidate for the Bocuse d'Or. He competed in the European final in Turin 2018 and the World final in Lyon 2019 where he placed 10th in the world. He is now the head coach for team UK. Tom currently holds his position as Executive Chef at the 2* Michelin starred Restaurant Story in Bermondsey, London.
Ambitious and creative, Tom has a vision to push the boundaries of UK gastronomy on to the international stage. Remaining with the Bocuse d'Or for the foreseeable future, Tom and his colleagues have firm plans to get the UK Bocuse d'Or team on to the podium.
