Illtud Dunsford is co-Founder and CEO of Cellular Agriculture Ltd (CellAg). CellAg pioneer the next generation of bioreactor technology to deliver biomanufacturing infrastructure for cultivated foods, pharmaceuticals, cosmetics and bio defence. During his career he has worked on feasibility, modelling and techno-economic studies for a range of clients including the European Space Agency, Merck KGaA and the Royal Agricultural University. He has drafted policy for UK government, co-authored an EU Protected Food Name, held a public position for a red meat levy board and co-authored a number of AgriFood industry position papers. He has worked with academia in the fields of animal health & genetics, food production and biotechnology, acted in the capacity of Industrial Supervisor to 5 PhD students, co-authored 4 academic papers, is a named inventor on 3 patents and was awarded a Nuffield Farming Scholarship in 2015. Illtud is also a farmer and formerly owned Charcutier Ltd, a specialist meats business that won the accolade of the Best Food Producer in the UK at the BBC Food and Farming Awards. He worked with a range of food businesses from street-food producers to Food Halls (Harrods, Selfridges, Fortnum and Mason), had a retail store at Borough Market, London and produced products for Michelin Starred restaurants.
