It’s going to be Chef central at HRC.  In an exciting new move for 2023, HRC are partnering with Chef Publishing, publishers of Chef & Restaurant Magazine, who will be curating Chef HQ at HRC.

Chef HQ will feature a demo kitchen stage adjacent to a discussion platform, in an area created specially to celebrate chefs. The space will feature a stage for informative sessions and the demo kitchen stage, which will be none other than Niall Keating’s Paradise Carriage. Across the three days of the show, Chef HQ will welcome some of the UK’s top chefs to talk through their favourite dishes and share their insights and kitchen best practice. Surrounded by some of the most innovative, exciting and relevant foodservice brands, the team behind Chef HQ are on track to deliver a packed programme of activity.

10:15am – 11:00am / Paradise Carriage Chef Demo with Discussion

Head chef of Lunar by Niall Keating, Craig Lunn has travelled through a career that has seen him in the kitchens of Alain Ducasse in his Middle East restaurant, Gordon Ramsay Royal Hospital Road, Kong Hans in Copenhagen before he joined Niall in his 2 Michelin starred Whatley Manor kitchen. Joining his friend and mentor, Craig opened Lunar with Niall in 2021 and has since been wowing diners and critics alike.

Craig who will be on the Demo Stage will be joined by Niall Keating on the discussion stage providing a truly interactive and engaging demo.

The Future Plate – Made You Look

11:00am – 11:45am / Discussion Stage

Founded by Julian George, The Future Plate brings together chefs of African and Caribbean heritage to share their culture through tasting menus. Leading chefs such as William Chilla, Jermaine Cunningham and Michelle Trusselle have joined Jules in showcasing outstanding cuisine in both private home settings and through events and brands partnerships. The Craft Guild of Chefs Graduate Awards. Now in its 21st year, the Graduate Awards celebrates burgeoning culinary talent in both larder and pastry. Becoming a graduate is a springboard for many a young chef's career and for 2023, Ben Murphy has been appointed Chair of the Examiners. Discover more about this incredible opportunity and how to get you, or a member of your brigade involved.

Paul Ainsworth on Next Level Chef (with special guest Demo)

11:45am - 12:15pm / Chef Demo and Discussion Platform

We all know Paul Ainsworth – No 6 Padstow, Café Rojano, The Mariners and the Padstow Townhouse. We have seen him grace the screens on Great British Menu and he is a regular on James Martin Saturday. This year, however, Paul joined his former Boss – Gordon Ramsay – to become one of the three judges on the UK edition of Next Level Chef. Joining Gordon and Nyesha Arrington, Paul worked with his team, to try and keep out of that bottom kitchen. Join Paul as we find out how it was to be back working with his old boss, and just how terrible is that bottom level kitchen?

Nikita Pathakji - Masterchef: The Professionals Winner

1:00pm - 1:45pm / Paradise Carriage Chef Demo

Excited to welcome Nakita to the Paradise carriage at Chef HQ.

Derby-born chef Nikita wowed the judges of Masterchef Professionals Marcus Wareing, Gregg Wallace MBE and Anna Haugh to be crowned Champion 2022. During the final critics and chefs raved about Nikita and her food, William Sitwell describing her as “a force to be reckoned with” and Jun Tanaka saying of her octopus starter at Chef’s Table: “You absolutely nailed it. It really took me back to when I was a child in Japan.”

Tom Brown - Cornerstone

2:15pm - 3:00pm / Paradise Carriage Chef Demo

​​​​​​In 2018, when Cornish Chef Tom Brown opened his first solo venture, Cornerstone, the Hackey based restaurant quickly became the hangout for the finest chefs in the UK. Travelling from all corners, diners flocked to Cornerstone to sample Toms’ seafood-based menus. Winning a Michelin star in 2021 secured what chefs had been saying for a long time – Tom Brown is a chef to keep an eye on, and there is more to come. Join Tom as he takes to the Paradise Carriage (his second time cooking on the carriage – he joined Niall Keating during lockdown) and we hear more about Cornerstone, and other Arctic Monkey tracks!

11:45 - 12:30 / Paradise Carriage Chef Demo

Glynn Purnell - The "Prince of Birmingham' takes to the Paradise Carriage for our final demonstration of the show. Awarded Birminghams first Michelin star for his restaurant, Purnell's, back in 2007, Glynn paved the way for the UK's second city to blossom in recent years with the additions of more and more Michelin starred establishments. Today, Birmingham holds one of the most exciting culinary scenes in the UK. Recently, Glynn has announced the opening of his first tapas style eatery, 'Plates by Purnell's'. Inspired by his own culinary journey, Plates will be a small tapas style bar serving small plates, great wines and cocktails. Lets find out more from the ever entertaining chef and BBC Saturday Kitchen host and general mischief maker, Glynn, as he joins us to end the series of demos with a good bit of Brummie banter!

There's many more fantastically talented chefs on the full line-up which you can find on the 2023 seminar programme.

Networking and friendships will also be celebrated, with the area turned over to become a social space from 3pm each day of the event. Expect lots of entertainment, canapés and refreshments while you get together with peers and friends to wind down after a busy day at the show.
